I’m writing this from Samoa – it’s going to be hard to leave, but it always helps to have something on back home in Sydney to look forward to. Gin is one of my favourite spirits, so I’m super excited for Bombay Sapphire’s Project Botanicals – a unique pop-up experience featuring gin cocktails inspired by exotic flavours from far-off lands paired with botanically inspired dishes that’s on in Sydney right now. Don’t miss the opportunity to experience one of two 5-course set menus designed by Chef James Viles of Biota Dining.
The menu at Project Botanicals pays tribute to each of the hand-selected botanicals found in Bombay Sapphire gin, including juniper berries from Tuscany, coriander seeds from Morocco, liquorice from the grassy plains of China, bitter almonds from Spain and cassia bark from Indo-China.
You’ll be among the first to taste the new Star of Bombay, a super premium gin that highlights two additional botanicals (ambrette seeds from Ecuador and bergamot orange from southern Italy), for a truly complex yet smooth profile.
